Parma’s great tradition in preserving foods comes from its ability to understand and enhance the aspects of all products and preserve them, i.e. maintaining all their flavour.
This culture has also fully developed the fish canning industry, with ingredients which come straight from the sea, just after the Apennines.

In fact it is no surprise that the best anchovies in oil are prepared by a Parma company.
